Why settle for ordinary cinnamon rolls when you can turn them into Turkey Cinnamon Rolls! Serve with crispy strips of bacon or sliced fresh fruit for some tasty tail feathers. Perfect for breakfast on Thanksgiving day, these whimsical sweets will leave everyone smiling!
¾ cup Full fat coconut milk
2 tbsp Maple syrup
1 tsp Pure Madagascar Vanilla Extract
3 cups White Almond Flour
2 cups Tapioca flour
1 tsp Baking soda
2 tsp Baking powder
¼ cup Butter, melted
⅓ cup Monkfruit brown sugar
1 tbsp Cinnamon
4 oz Cream cheese, softened
2 tbsp Butter, melted
½ cup Monkfruit powdered sugar
1 tbsp Almond milk
Candy eyes
Mandarins, sliced (for the noses)
Fresh fruit, sliced (for the turkey tails)
Strips of bacon, cooked (for the turkey tails)
Preheat oven to 350°F. In a stand mixer fitted with a paddle attachment, mix together the coconut milk, maple syrup, and vanilla extract on medium speed. Mix in the almond flour, tapioca flour, baking soda, and baking powder until a dough forms. Set aside while you whisk together the filling ingredients.
Sprinkle tapioca flour on a piece of parchment paper. Roll the dough out into a rectangle about a ½” in thickness. Spread the filling over the dough, leaving about ¾” of space from the edges for rolling.
Using the parchment paper, roll the dough into a long log. Use a string or floss to cut into pieces, about 2” in thickness. Place cinnamon rolls in a lightly greased pan or baking dish and bake for about 20 minutes, until the tops turn golden.
While cinnamon rolls are baking, mix together the Cream Cheese Frosting ingredients in a bowl with a whisk.
Once cinnamon buns are finished baking, pour on your cream cheese frosting. Allow frosting to cool.
Once frosting has cooled, plate your cinnamon rolls. Add some candy eyes and cut up mandarins for the beaks. To create a tail, serve with some strips of bacon or slice up some fresh fruit to arrange in your desired pattern. Enjoy!
