Impress your guests by adding some extra shine with our vibrant, all-natural PurColour Brilliant Powders and Crystal Sugars. Perfectly paired with a glass of champagne - Cheers!
Strawberries, washed and dried
Belgian White Chocolate (see recipe notes)*
Tumaco 65% Dark Chocolate (see recipe notes)
Satin Gold Brilliant Powder
Gold Crystal Sugar
Special Equipment: Clean, Dry Paintbrush (for painting the strawberries in Brilliant Powder)
Optional: Small amount of high proof alcohol (see recipe notes).**
Melt the Belgian White Chocolate and Dark Chocolate in separate bowls (see recipe notes).***
Prepare a piece of wax paper to let the strawberries set after dipping them in chocolate. If coating strawberries in Crystal Sugar, pour the Gold Crystal Sugar into a bowl and set aside.
Dip half of the strawberries in the melted white chocolate, and the other half in the dark chocolate holding the strawberries by the stems or by inserting a toothpick into the top.
Immediately roll the strawberries in the Gold Crystal Sugar and lay on a piece of wax paper.
For the strawberries not being coated in Crystal Sugar, lie them on the wax paper to set. If painting on Brilliant Powder, wait for the chocolate covered strawberries to dry completely.
To dust with Brilliant Powder, remove a small amount of powder from the jar into a shallow bowl or plastic bag. Use your clean, dry paintbrush to dip into the Brilliant Powder and gently dust and buff onto the chocolate covered strawberries. Enjoy!
*Not a white or dark chocolate fan? Feel free to use any of our selection of dark, milk, or white chocolates. We also offer confectionery coatings with gourmet chocolate flavor and no tempering required that are perfect for dipping fruit.
**Brilliant Powder Tip: Want to create intricate gold designs on your chocolate covered strawberries? For a more metallic finish, mix the Brilliant Powder with a small amount of high proof alcohol to create a liquid paint instead of applying dry. The alcohol mixture is more lustrous, while using the dry powder offers a soft, brushed metallic look. This method is perfect for detail work, defined brush strokes, drip effects, splatters and more! If coating the strawberry entirely in Brilliant Powder (like in this recipe), applying the powder dry is the best method.
Looking for a stronger metallic look? The Vivid Collection is formulated to have a more opaque metallic finish than our original Brilliant Powder collection. Also, be sure to check out our blog post for 5 Reasons You Need Brilliant Powders in Your Life!
