Oat M!lk Chocolate Grasshopper Pie

This chocolatey mint pie gets its color from avocado, but you would never know! It's naturally sweet (thanks to dates) and is full of nourishing ingredients - topped off of our antioxidant-rich, creamy and plant-based Oat M!lk couverture from Luker Chocolate!
1 Packed cup of pitted dates, soaked in hot water for 5 minutes
1 ½ Cups almond flour
2 Tbsp cocoa powder
1 Large avocado, peeled & pitted
2 Tbsp cashew butter
½ Tsp mint extract
1 Small ripe banana
¼ Cup coconut cream
⅓ Cup maple syrup
⅓ Cup Oat M!lk Chocolate, melted
Blend together the crust ingredients until clumps form. Press the mixture on a parchment-lined pie dish.
Wipe the blender, then blend together the filling ingredients, stopping occasionally to scrape down the sides. Pour the filling into the pie crust.
Microwave the Oat M!lk chocolate in 30 second intervals until melted. See recipe notes below*
Drizzle the melted chocolate over the pie.
Place pie in the refrigerator (or freezer) for at least one hour. Slice into pieces and enjoy!
