Directions
Add the coconut cream, pure vanilla extract, and monkfruit powdered sugar to a stand mixer. Mix on medium/high speed (6 on a Kitchenaid) until light and fluffy.
Separate the mousse equally into 3 bowls. Mix one colorant in each bowl until your desired hue is reached. For a stronger, more vibrant colored mousse, add more colorant.
Using a pastry bag or spoon, pipe or scoop layers of each color into a large glass, filling all the way to the top. Top with an edible chocolate Unicorn Face plaque if desired, and enjoy!
