We promise we won't judge if you eat this straight out of the pan! Gooey homemade marshmallow creme harmoniously combines with our favorite Luker Oat M!lk Chocolate and warm graham cracker crust for a seriously cozy baked treat.
Gluten-free, grain-free and dairy-free.
Ingredients
2 Cups Almond Flour
1 Tbsp Coconut Flour
1 tsp Baking Powder
2 tsp Ground Cinnamon
½ Sea Salt
1 Egg
2 Tbsp. Coconut Oil
2 Tbsp. Raw Honey
-
⅔ Cup Luker 43% Oat M!lk Chocolate
⅔ Cup Marshmallow Creme (Recipe to follow)
½ Cup Water, divided
1 ½ Tbsp. Gelatin
½ Cup Raw Honey
S'mores Skillet
For the Toppings:
Marshmallow Creme
Directions
S'mores Skillet
Preheat the oven to 325°F.Lightly grease a 12-inch cast iron skillet.
Mix together the flours, baking powder, cinnamon, and salt. Mix in the egg, coconut oil, and honey until a dough forms.
Press the dough into the bottom of the skillet and bake for 20 minutes, or until the edges turn golden brown.
Spread the chocolate out over the crust and bake for another 2 minutes, or until the chocolate begins to melt.
Top with marshmallow creme. You can just spread it out on top of the chocolate, or put it in a plastic bag, cut off the corner, and pipe the creme on top of the chocolate.
Optional: Drizzle melted chocolate on top of the marshmallow.
Marshmallow Creme
Mix together ¼ cup warm water and gelatin.
In a small saucepan on high heat, whisk together ¼ cup water and the honey. Once boiling, continue whisking for 8 minutes.
Turn the mixer on low and slowly pour the honey mixture into the gelatin mixture. Turn the mixer on high and mix for another 10 minutes. The mixture should get very fluffy and change color from amber to white.
Use the marshmallow creme immediately. If it solidifies into marshmallows, reheat it in the microwave for 10 second increments.
Store the marshmallows in an airtight container in the refrigerator so it is ready to go whenever you need!
