These Paleo Valentine Cookies from Healthy Holme couldn't be easier to make! Half dipped in fine chocolate and embellished with colorful, natural sprinkles, these healthier cookies are perfect to make with friends and family.
2 Cups White Almond Flour
2 Tbsp honey
2 ½ Tbsp coconut oil (melted)
1 Tsp almond extract
½ Cup Tumaco 85% Dark Chocolate
Confetti Sugar, various colors
Preheat oven to 350°F. Line a large baking sheet with parchment paper or a silicone mat.
Mix together the almond flour, honey, coconut oil, and almond extract.
Roll out the dough on a piece of parchment paper to ¼" thickness. Use some cookie cutters to cut out shapes.
Bake cookies at 350°F for 8 minutes, or until the edges turn golden.
Let the cookies cool completely. While cooling, microwave the chocolate in a ramekin about the size of the length of the cookie, stopping every 30 seconds to stir.
Dip half of the cookie in the chocolate (you may need to tilt the ramekin), and transfer to a baking sheet lined with wax or parchment paper.
Sprinkle with Confetti Sugar and transfer to the refrigerator to set.
Storage: Cookies are best stored in the refrigerator.
