Paleo Vanilla Donuts with Rainbow Crystal Sugar•

1 Tbsp Pure Madagascar Vanilla Extract
⅓ Cup coconut oil, melted
⅓ Cup coconut milk
½ Cup raw honey
1 Tsp apple cider vinegar
2 Cups almond flour
¼ Cup coconut flour
1 Tsp baking powder
½ Cup coconut butter, melted
½ Cup coconut cream, melted
¼ Cup maple syrup
2 Tsp Pure Madagascar Vanilla Extract
Rainbow Crystal Sugar (as needed)
Preheat the oven to 350°F.
Lightly grease 2 silicone donut molds.
In a stand mixer, blend together the eggs, vanilla, coconut oil, coconut milk, honey, and apple cider vinegar until smooth.
Add in the flour and baking powder and mix together.
Distribute the batter evenly between the 12 donut molds and bake for 20 minutes, or until a toothpick comes out clean.
While baking, mix together the icing ingredients in a shallow bowl.
Melt the icing in the microwave in intervals of 10 seconds until warm.
Once cool, dip the donuts in the melted icing and place in the refrigerator for 10 minutes to firm up.
Dip the donuts in the Rainbow Crystal Sugar and enjoy!
