A birthday cake to remember! Whether for a kids party or an adult celebration, this paleo vanilla cake covered in naturally colored green icing is a blast for any occasion.
⅓ Cup full fat coconut milk
⅔ Cup melted coconut oil
8 Eggs
¾ Cup honey
3 Tsp apple cider vinegar
1 Tsp baking powder
½ Tsp sea salt
1 Cup coconut flour
½ Cup coconut cream (the solid part at the top of a chilled can of coconut milk), softened but not melted
½ Cup butter, softened but not melted
3 Tbsp honey
2 Tsp vanilla extract
2 Tbsp coconut flour
PurColour Green Colorant (amount varies depending on desired color and amount of frosting - for this recipe, Stephanie used 2 tsp).

Preheat the oven to 350°F.
Grease 2 round cake pans and line the bottoms with parchment paper. Line one cavity of a cupcake tin with a green colored cupcake liner (to match the frosting).
Mix together all of the wet ingredients. Then mix in the dry ingredients.
Divide the batter evenly between the 2 round pans and the 1 cupcake tin. Bake for 20-25 minutes, or until a toothpick comes out clean.
While the cakes bake, make the icing.
Blend together the coconut cream, butter, honey, and vanilla on low until mixed together.
Increase the blender speed to high to whip. If the icing is thin, add a little coconut flour at a time until desired thickness.
Tint the icing with PurColour Green Colorant (you can always add more to adjust)
Once the cakes are cool, start making the frog shape by adding the green frosting to the top of one cake. Stack the other cake on top, then add frosting to the top and sides.
Cut the cupcake in half, add frosting, and place it on top of the cake to create the eyes. Add 2 Luker Huila Chocolate coins for the pupils.
Add raspberries for the mouth, and 2 mini chocolate chips for the nostrils and your frog cake is complete!
