Super simple to make, these Paleo Watermelon Cake Bites are a nice treat for a summer afternoon! If you're short on time, you can even swap out the paleo vanilla cake for a boxed cake mix. Serve them up at your next BBQ, pool party or picnic!
3 Eggs
1 ½ tsp Pure Vanilla Extract
2 tbsp Coconut oil, melted
2 ½ tbsp Coconut cream (thick part at the top of a can of chilled coconut milk), melted
⅓ cup Raw honey
1 cup Almond Flour
2 tbsp Coconut flour
½ tsp Baking powder
4 oz Cream cheese
1 tbsp Maple syrup
½-1 tsp Dry Colorant, Red
¼ Selva 46% Dark Chocolate Chips
1 cup Belgian White Chocolate, melted
1 tbsp Dry Colorant, Green
1 tbsp Green Crystal Sugar (optional)
Preheat oven to 350°F. Line an 8” round pan with parchment paper and lightly grease the sides.
Blend together eggs, vanilla, coconut oil, coconut cream, and honey until smooth. Add in the flours and baking powder. Mix well.
Pour batter into your prepared pan and bake at 350°F for 20 minutes, or until a toothpick comes out clean.
Once cake is cool, crumble the cake and add it to a bowl along with the cream cheese, maple syrup, and red colorant (start with ½ tsp and, if needed, add more to achieve desired color). Add in the dark chocolate chips.
Use your hands to mix everything and roll into balls. Place cake balls on a baking sheet lined with parchment paper and refrigerate for 10 minutes to set.
Melt the chocolate, then mix in green colorant. You can add more green colorant to reach your desired shade.
Use two forks to dip cake balls in the melted white chocolate. Place your chocolate covered cake balls on a baking sheet lined with parchment paper.
If desired, drizzle excess melted chocolate over cake balls and sprinkle with Green Crystal Sugar. Enjoy!
