Gluten-Free Iced Apple Cinnamon Pop Tarts

Pop tarts, but make them healthy and homemade! Made with quality ingredients, these simple, sweet Apple Cinnamon Pop Tarts with monkfruit icing are a perfect treat for fall. They're also free from gluten, dairy, and refined sugars, but you'd never know!

Ingredients

  • 2 cups White almond flour
  • 2 tsp Cinnamon
  • 1 large Egg
  • 2 tbsp Coconut Oil
  • 2 tbsp Honey
  • 1 Apple, peeled and chopped
  • 1 tsp Cinnamon
  • 3 tsp Coconut sugar
  • 1 tsp Pure Vanilla Extract
  • ¼ cup Monkfruit Powdered Sugar
  • 2-3 tsp Almondmilk

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Add all filling ingredients to a saucepan and heat on medium heat, stirring frequently, until the apple begin to soften (about 5 minutes).
  3. In a stand mixer with a paddle attachment, mix together the crust ingredients until a dough forms.
  4. Roll the crust out into a large rectangle on your prepared baking sheet. Use a pizza cutter to make straight edges, then cut once vertically up the middle and four times horizontally to form 8 smaller rectangles.
  5. Add about a tablespoon of your apple cinnamon filling to the middle of one of the rectangles. Repeat with 3 more rectangles.
  6. Place the remaining 4 rectangles on top of the rectangles with the filling. Use a cake fork to seal the edges. *See recipe notes
  7. Bake at 350°F for 12 minutes, or until the edges begin to turn golden brown.
  8. If adding icing, stir the almond milk into the monkfruit powdered sugar, starting with 2 tsp and gradually adding more until the desired consistency is reached. Pour on top of the pop tarts and enjoy!
