Celebrate St. Patrick's Day with these festive Lucky Mint Chocolate Whoopie Pies. Simple to make at home, they feature a rich chocolate cake and a refreshing minty cream cheese filling. This treat is the perfect, easy dessert to add a touch of green luck to your holiday spread.
Preheat your oven to 350°F (177°C) and grease or line your whoopie pie molds
In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In a stand mixer fitted with a paddle attachment, beat the butter, shortening, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, scraping down the bowl as needed.
Pour in the buttermilk, with the rest of the dry ingredients, mixing until fully incorporated.
Transfer the batter to a piping bag and pipe onto your whoopie pie molds. Bake for 8-10 minutes, or until set. Allow shells to cool.
Cream Cheese Filling
In a stand mixer fitted with a paddle attachment, beat the cream cheese and butter until smooth.
Gradually incorporate the powdered sugar until smooth. Then, add the Dreidoppel Vanilla Moroni Paste and blend thoroughly. Next, add Dreidoppel Creme de Menthe to taste, and finally stir in green food coloring until you achieve your desired shade.
Assembly
Transfer the filling to a piping bag. Pipe the cream cheese filling onto one whoopie shell and sandwich with another.
