These Lucky Mint Chocolate Whoopie Pies are the perfect treat. Made with Luker Natural Cocoa Powder for a rich and deep chocolate flavor. The cakes are paired with a creamy minty filling made using Dreidoppel Creme de Menthe Paste. The filling adds just right amount of refreshing mint, balanced by the warmth of Dreidoppel Vanilla Moroni Paste.

1 oz / 28 g Luker Natural Cocoa Powder 22 - 24%
1.1 oz / 5 g Baking Powder
1.1 oz / 5 g Baking Soda
1.1 oz / 5 g Salt
3.5 oz / 100 g Butter, Room Temperature
3.5 oz / 100 g Shortening
4.9 oz / 140 g Light Brown Sugar
7 oz / 200 g Granulated Sugar
2 Eggs
8 oz / 226 g Buttermilk

0.5 oz / 14 g Dreidoppel Vanilla Moroni Paste
2 oz / 56 g Butter, Room Temperature
10.5 oz / 297 g Powdered Sugar, Sifted

Preheat your oven to 350°F (177°C) and grease or line your whoopie pie molds
In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In a stand mixer fitted with a paddle attachment, beat the butter, shortening, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, scraping down the bowl as needed.
Pour in the buttermilk, with the rest of the dry ingredients, mixing until fully incorporated.
Transfer the batter to a piping bag and pipe onto your whoopie pie molds. Bake for 8-10 minutes, or until set. Allow shells to cool.

Gradually incorporate the powdered sugar until smooth. Then, add the Dreidoppel Vanilla Moroni Paste and blend thoroughly. Next, add Dreidoppel Creme de Menthe to taste, and finally stir in green food coloring until you achieve your desired shade.

Transfer the filling to a piping bag. Pipe the cream cheese filling onto one whoopie shell and sandwich with another.
