It's your lucky day, because these St. Patrick's Day Pot of Gold Brownie Pops from Healthy Holme are super cute and simple to make (no baking required)! Starring subtly sweet Tumaco 85% Dark Chocolate with floral and fruity notes, Natural Cocoa Powder to give the brownie bites their rich, chocolatey flavor, and vibrant Gold Crystal Sugar to resemble gold coins. A fun recipe for all ages!
We've struck gold with these St. Patrick's Day Pot of Gold Brownie Pops! Chocolatey, no-bake brownie dough is dipped in luscious dark chocolate, then topped with sparkly Gold Crystal Sugar to look like shimmering pots of gold. Leprechaun approved!
In a bowl, mix together the brownie dough ingredients with a spoon.
Using your hands, roll the brownie dough into 6 equal sized balls (about the size of a golf ball).
Dip popsicle sticks into melted dark chocolate, insert into the brownie balls, and place in the refrigerator for 10 minutes.
Remove brownie pops from refrigerator. Holding onto the stick, dip each brownie ball in the melted chocolate, tapping twice to remove excess chocolate.
Place brownie pops stick-side up on a baking sheet lined with parchment paper. Place in the freezer to set.
After about 10 minutes, or whenever the chocolate has hardened, add a little melted chocolate to the flat side of the ball (the part that was lying on the baking sheet) and immediately dip in the Gold Crystal Sugar. Enjoy!
