The Cherry Garcia of muffins, but better! These Cherry Almond Muffins with Cherry White Chocolate Ganache have the perfect balance of tart, nutty and sweet. Starring Vanilla Moroni, chopped Amarena Cherries, sliced almonds and white chocolate chips, topped off with a heavenly cherry white chocolate ganache. It's cherry nirvana!

13 oz (370g) Blanched Almond Flour

3.6 oz (100g) Granulated sugar

0.25 oz (7.2g) Baking powder

0.12 oz (3.4g) Salt

2 Eggs

4 oz (114g) Greek Yogurt

0.25 oz (7g) Vanilla Moroni Paste

5 oz (142g) DGF Amarena Cherries, chopped

2 oz (57g) White Chocolate Chips
-
0.7 oz (30g) Sliced Almonds, plus more for top garnish

2.6 oz (75g) Heavy Cream
-
8 oz (227g) White Chocolate or Confectionery Coating

1.23 oz (35g) Dreidoppel Amarena Cherry Paste
Gluten-Free Cherry Almond Muffins
Amarena Cherry White Chocolate Ganache
Directions
Gluten-Free Cherry Almond Muffins
Preheat oven to 350˚F.
In a large bowl, mix all dry ingredients and whisk together to combine.
In a separate bowl, combine all wet ingredients and pour into the dry ingredients.
Gently mix together until there are no more lumps, but be careful not to overmix.
Fold in chopped Amarena Cherries, white chocolate chips and sliced almonds.
Scoop muffin batter into prepared muffin pan. Top off with a few more almond slices.
Bake at 350˚F for 15 minutes; check periodically to see if muffins are browning too fast (see recipe note at the bottom of this page if they are). To check if they're done, insert a toothpick in the center.
When done, cool muffins on a rack. Drizzle with the Amarena Cherry White Chocolate ganache (recipe to follow).
Amarena Cherry White Chocolate Ganache
Heat heavy cream on medium heat until it starts bubbling. Remove from heat.
Pour white chocolate confectionery coating into the heavy cream, making sure they are fully submerged in the cream.
Let it sit for a few minutes. Whisk slowly until the cream and white chocolate are fully combined.
Strain mixture into a bowl to ensure that all of the white chocolate has melted to achieve a smooth glaze.
Stir in the Dreidoppel Amarena Cherry Flavor Paste as recommended on the packaging, or more if you desire a stronger cherry flavor.
Recipe Note:
For the muffins:
If muffins aren't fully baked after the first 15 minutes but are browning too quickly on the top, lightly cover the muffins with aluminum foil and bake for another 5-7 minutes.
