Cranberry Orange Brittle

Ingredients
- 1 cup (227g) Unsalted butter, softened
- 3 cups (600g) Granulated sugar
- ¾ Cup (200g) Glucose Syrup
- 1 tsp (10g) Salt
- ½ cup (160g) Water
- 1 tbsp (20g) Orange Flavor Paste
- 1 tbsp (20g) Baking soda
- 1 ½ cups (125g) Candied orange peel cubes
- 1 cup (120g) Dried cranberries
Directions
- Lightly spray a 12x17” pan with cooking spray.
- In a heavy duty, thick bottomed pot (8 quart or larger), combine butter, sugar, glucose syrup, salt, and water.
- Heat over medium heat until butter is melted and sugar is dissolved. Stir this entire time.
- Increase heat to high, bring mixture to a boil and cook until temperature reaches 305°F, stirring the entire time. Turn off heat.
- In this order, stir in the Orange Flavor Paste, baking soda, candied orange peel cubes and dried cranberries.
- Stir gently to not “pop” all of the air created by the baking soda.
- Pour onto a prepared baking sheet, and spread gently.
- Cool completely. Break into pieces. Serve and enjoy, or store in an airtight container with parchment paper between layers. *See recipe notes
