Ingredients
Pop Tart Crust

2 cups White almond flour

2 tsp Cinnamon

1 large Egg
-
2 tbsp Coconut Oil
-
2 tbsp Honey
Apple Cinnamon Filling

1 Apple, peeled and chopped

1 tsp Cinnamon
-
3 tsp Coconut sugar
-
1 tsp Pure Vanilla Extract
Monkfruit Icing (Optional)

¼ cup Monkfruit Powdered Sugar
-
2-3 tsp Almondmilk
Directions
Preheat oven to 350°F. Line a baking sheet with parchment paper.
Add all filling ingredients to a saucepan and heat on medium heat, stirring frequently, until the apple begin to soften (about 5 minutes).
In a stand mixer with a paddle attachment, mix together the crust ingredients until a dough forms.
Roll the crust out into a large rectangle on your prepared baking sheet. Use a pizza cutter to make straight edges, then cut once vertically up the middle and four times horizontally to form 8 smaller rectangles.
Add about a tablespoon of your apple cinnamon filling to the middle of one of the rectangles. Repeat with 3 more rectangles.
Place the remaining 4 rectangles on top of the rectangles with the filling. Use a cake fork to seal the edges. *See recipe notes
Bake at 350°F for 12 minutes, or until the edges begin to turn golden brown.
If adding icing, stir the almond milk into the monkfruit powdered sugar, starting with 2 tsp and gradually adding more until the desired consistency is reached. Pour on top of the pop tarts and enjoy!
Recipe Note:
*Sealing the Pop Tarts:If the dough has begun to dry out, use a basting brush or your finger to add a little water to the edges. Then use a cake fork to seal the edges.
