Gluten-Free Polar Bear Paw Sugar Cookies

A charming addition to your winter cookie selection, these Gluten-Free Polar Bear Paw Sugar Cookies are super easy to make and are sweetened with monkfruit. Stephanie used our Luker Chocolate couverture and chocolate chips to create the paw prints and added in some Silver Crystal Sugar for extra pizazz. No special decorating skills required!

Ingredients

  • ½ Cup butter, softened
  • ½ Cup monkfruit sugar
  • 1 Egg
  • 1 Tsp Pure Vanilla Extract
  • 1 ¼ Cup gluten-free flour
  • ½ Tsp baking soda
  • ½ Tsp baking powder
  • 10 Pieces 85% Dark Chocolate Couverture
  • 30 Pieces Selva 46% Dark Chocolate Chips (1,000 pc/lb)
  • Optional: Silver Crystal Sugar (for garnish)

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Using a stand mixer, blend the butter and sugar together. Add in the egg, pure vanilla, baking soda, baking powder, and gluten-free flour. Mix until combined.
  3. Use a large cookie scoop (about 3 tbsp). to form 10 cookies. Flatten the cookies (Stephanie used a drinking glass) until they are about a ½” in thickness.
  4. Press one piece of chocolate and three chocolate chips into each cookie to form a paw print. If desired, sprinkle on some Crystal Sugar.
  5. Bake at 350°F for 10 minutes or until cookies are just set. Enjoy!
