These Halloween Pumpkin Donuts are so easy to make, it's scary! Turn them into vampires and mummies with candy eyes and teeth, or customize them to look like your favorite monsters. Perfect as a treat during a spooky movie night!
Ingredients

2 Overly ripe bananas

½ Cup pumpkin purée

3 Tbsp almond butter
-
2 Tbsp melted coconut oil

2 Eggs
-
1 ½ Cups White Almond Flour

1 Serving Vanilla Protein Powder *See recipe notes

1 Tsp baking soda
-
1 Tsp baking powder
-
2 Tsp pumpkin pie spice
-
2 Tsp cinnamon
-
Approximately ½ Cup Perla 64% Dark Chocolate
-
½ Tsp coconut oil
-
Candy eyes and fake vampire teeth **See recipe notes

3 Tbsp Belgian White Chocolate

Optional: Orange sprinkles

Pumpkin Donuts
Preheat the oven to 350°F. Grease a silicone donut pan.
Mix together the bananas, pumpkin, almond butter, coconut oil, and eggs. Once smooth, mix in the remaining ingredients.
Distribute the batter evenly into 11 donut molds, depending on the size of your pan.
Bake at 350°F for 15 minutes, or until a toothpick comes out clean. Allow to cool on a cooling rack.
While donuts are cooling, melt the Perla Dark Chocolate in a bowl large enough to dip the donuts and add in the coconut oil. Mix and set aside.
Melt the Belgian White Chocolate and pour into a piping bag or have a spoon ready for drizzling.
Dip the tops of the donuts into the melted Perla Dark Chocolate.
For the vampire donuts, cut the candy teeth in half and insert the cut sides into the chocolate topped side of the donut. Press the candy eyes into the chocolate icing above the teeth to resemble a face.
To create the mummy donuts, use the piping bag or spoon to drizzle the Belgian White Chocolate on top of the dark chocolate icing in a back and forth motion. Press some candy eyes into the icing to look like a mummy face.
Optional: If you want to have some general Halloween-themed donuts, sprinkle on some fun orange sprinkles!
Recipe Note:
*Stephanie used Vanilla Protein Powder from Happy Way, but any protein powder will work. Using the vanilla flavor will add sweetness to the recipe.
**For the candy eyes and teeth, Stephanie used store-bought Wilton candy eyes and fake vampire teeth from Walmart but feel free to use whatever is available to you. If you prefer, you can also try your hand at creating Royal Icing Googly Eyes, as shown in our White Chocolate Mummy Cookie recipe.
