Healthy Chocolate Pecan Pie

Ingredients
- 2 Cups of dates (for the crust)
- 1 Cup softened, pitted dates (see recipe notes)
- 1 ½ Cups pecan flour (for the crust)
- 1 Tsp pecan flour (for the filling)
- 3 Eggs
- 1 Tsp Pure Vanilla
- 6 Tbsp Butter
- ½ Tsp sea salt
- 1 Tsp cinnamon
- 1 Tsp Luker Natural Cocoa Powder or cacao
- ¼ Cup Santander Dark Chocolate
- Sprinkles (for garnish)
- Pecans (for garnish)
Directions
- Preheat the oven to 350°F and lightly grease a pie dish.
- Boil 2 cups of dates with 1 cup of water. Meanwhile, in a food processor, blend 1 ½ cups of pecan flour with 1 cup of softened pitted dates.
- Add ½ teaspoon of water at a time until the dough sticks together.
- Spread the dough out over the base and sides of the greased pie dish.
- Wipe out the food processor and then blend the boiled dates (and any remaining water), eggs, pure vanilla, butter, sea salt, cinnamon, pecan flour and cacao together.
- Break up the Santander Dark Chocolate disks into smaller pieces, and layer them onto the crust, and pour the filling on top.
- Top with pecans.
- Bake for 40 minutes at 350°F, or until the filling is set. Garnish with the Mini Dark Chocolate Stars. Serve warm or chilled, and enjoy!
