If you're in search of a healthier dessert to bring to Thanksgiving this year, look no further! Stephanie Niemis from Healthy Holme brings you this nutritious take on a classic pecan pie, making smart substitutions like dates, dark chocolate, and pecan flour. Even with the swaps, this treat will still be a hit!
Preheat the oven to 350°F and lightly grease a pie dish.
Boil 2 cups of dates with 1 cup of water. Meanwhile, in a food processor, blend 1 ½ cups of pecan flour with 1 cup of softened pitted dates.
Add ½ teaspoon of water at a time until the dough sticks together.
Spread the dough out over the base and sides of the greased pie dish.
Wipe out the food processor and then blend the boiled dates (and any remaining water), eggs, pure vanilla, butter, sea salt, cinnamon, pecan flour and cacao together.
Break up the Santander Dark Chocolate disks into smaller pieces, and layer them onto the crust, and pour the filling on top.
Top with pecans.
Bake for 40 minutes at 350°F, or until the filling is set. Garnish with the Mini Dark Chocolate Stars. Serve warm or chilled, and enjoy!
Recipe Note:
To soften the dates, soak them in a cup of hot water for about five minutes. To heat the water, you can microwave it for about one minute.
