Homemade St. Patrick's Day Dipped Oreos (Gluten-Free)

Homemade St. Patrick's Day Dipped Oreos (Gluten-Free)
Who needs a pot of gold when you've got your own Homemade St. Patrick's Day Dipped Oreos? Gluten-free and made with simple ingredients, this recipe will be your lucky charm for classrooms, parties, potlucks and more!
Preheat the oven to 350°F. In a bowl, mix together all of your cookie ingredients (almond flour, raw honey, cocoa powder, melted coconut oil, vanilla and egg).
Using a rolling pin, roll out your cookie dough on a silicone baking mat or a piece of parchment paper. Using a 2” cookie cutter (or preferred size), cut out circles and remove excess dough. Repeat until all of the dough has been cut into circles, making about 60 cookies. Bake in the oven at 350°F for 11 minutes.
While cookies are baking, prepare your cream cheese filling. In a stand mixer fitted with a whisk attachment, blend together the butter, cream cheese, vanilla, monkfruit powdered sugar, and green colorant on low speed until everything is fully incorporated. Increase mixing speed to 6 or 8 for a few more minutes to achieve a more whipped texture. Add your filling to a piping bag fitted with a round tip, or use a Ziploc bag and snip off a corner. *See recipe notes
Once your cookies are out of the oven and have fully cooled, pipe your colored cream cheese filling onto one of the cookies. Place another cookie on top to create a sandwich, and press together. Repeat until all cookie sandwiches are filled.
If desired, dip half of your filled cookie sandwiches into the melted white chocolate and finished with a sprinkle of Green Crystal Sugar. Place in the refrigerator for 10 minutes to set before serving. **See recipe notes
Recipe Note:
*Natural Green Colorant: If a more vibrant shade of green is desired for your cream cheese filling, simply add more colorant when mixing. We recommend starting with 1 teaspoon of colorant and adding from there until you reach your desired color.
